Ingredients
- 2 tablespoons olive oil (extra-virgin)
- 8 slices of baguette, each 1/4 inch thick
- Kosher salt and fresh black pepper
- 5 tablespoons salted butter, cut into pieces
- 2 1/2 pounds ripe tomatoes, cored and chopped
- 1 quart low-sodium chicken or vegetable broth
- 1 large white onion, diced
- Pesto (homemade or store-bought), for serving
- Shaved parmesan cheese, for serving
Step 1: Prepare the Bread
In a large Dutch oven over medium-high heat, warm the oil until it shimmers.
Add the bread slices and cook until they are golden brown on both sides, about 2 minutes per side.
Remove the bread from the pot and transfer to a large plate, then sprinkle with salt and pepper.
Set aside for later use.
Step 2: Cook the Tomatoes
Using the same Dutch oven, add the butter and tomatoes over medium-high heat.
Cook the tomatoes, stirring occasionally, until they begin to break apart and the skins start to peel away — this should take about 5 minutes.
Step 3: Simmer the Soup
To the pot with tomatoes, add the broth, onion, and a large pinch each of salt and pepper.
Bring the mixture to a boil, then reduce the heat to medium-low.
Cook uncovered, stirring occasionally, until the onion has softened and the tomatoes have broken down, about 20 minutes.
Adjust the heat as necessary to maintain a steady simmer.
After cooking, allow the soup to cool uncovered for about 5 minutes.
Step 4: Blend the Soup
Transfer the soup in batches to a blender to avoid overfilling, and puree until smooth.
Depending on the size of your blender, this may take 2 or 3 batches.
Once smooth, return the pureed soup to the pot.
Step 5: Reheat and Season
Reheat the blended soup over medium heat, stirring occasionally.
Taste the soup and adjust the seasoning with additional salt and pepper as needed.
Step 6: Serve and Garnish
Ladle the hot soup into bowls.
Top each serving with a dollop of pesto, a slice of the toasted bread, and a sprinkle of shaved Parmesan.
