Ingredients

  • 1 pack (200 g) graham crackers
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon powder
  • 2 tablespoons sugar
  • 1/2 cup melted unsalted butter
  • 1 can (370 ml) evaporated milk or commercial eggnog
  • 1 cup full-fat milk (3.25%)
  • 1/2 cup heavy cream (35%)
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons gelatin powder
  • 1/4 cup cornstarch
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon rum or rum extract (optional)
  • 1 cup heavy cream (35%)
  • 1 tablespoon rum or 1/2 teaspoon rum extract
  • 1 tablespoon sugar

Step 1: Prepare and Bake the Crust

Preheat the oven to 350°F.

In a food processor, pulse together crackers, salt, cinnamon, sugar, and butter until fully combined.

Reserve 3 tablespoons of this mixture for garnish.

Firmly press the remaining crust mixture into the bottom and up the sides of an 8- or 9-inch pie plate.

Bake for 10 minutes, then let it cool completely.

Step 2: Prepare the Filling

In a medium saucepan, whisk all the filling ingredients together until well combined.

Cook over medium heat, whisking constantly, until the mixture starts to boil, approximately 5 to 10 minutes.

Once boiling, continue whisking and cook for an additional 30 seconds to ensure the filling thickens properly.

Step 3: Chill and Smooth the Filling

After the initial chilling period, whisk the filling again until it is smooth and lump-free.

Pour the filling into the prepared crust and smooth it out evenly with a spatula.

Bake at 350°F for 10 minutes to set the filling.

Step 4: Prepare the Rum Whipped Cream

While the filling is chilling, begin preparing the rum whipped cream.

In a stand mixer or by hand with a whisk, beat 1 cup of whipping cream, rum, and sugar together until medium-firm peaks form.

This will create a light and fluffy topping for your pie.

Step 5: Assemble and Serve

Spoon the whipped cream over the cooled filling, spreading it evenly over the surface.

Garnish with the reserved crust crumbles for added texture and flavor.

Slice the pie and serve chilled for the best results.

Enjoy your delightful, homemade dessert!
