Ingredients
- 2 cups chow mein noodles
- 1 cup butterscotch morsels
- 1/2 cup creamy peanut butter
- 1 cup salted peanuts (or substitute with cashews, slivered almonds, or chopped walnuts)
- Optional: sprinkles
Step 1: Prepare Noodle and Peanut Mixture
In a large bowl, toss together fried chow mein noodles and salted peanuts until they are evenly distributed.
Set this mixture aside for now.
Step 2: Melt Butterscotch Chips and Peanut Butter
In a separate bowl, combine butterscotch chips and creamy peanut butter.
Melt them together using either a microwave or a double boiler, applying gentle heat until they are just melted.
Be careful not to overheat the mixture.
Step 3: Mix and Combine with Noodles
Whisk the melted butterscotch and peanut butter mixture until it is smooth and creamy.
Pour this mixture over the chow mein noodles and peanuts.
Using a silicone spatula, gently stir to ensure a uniform coating over the noodles.
Take care not to break the noodles too much during this process.
Step 4: Scoop and Shape Cookies
Using a 2-tablespoon scoop, carefully scoop portions of the mixture onto a baking tray lined with parchment paper or wax paper.
If using an ice cream scoop, handle it gently to avoid breaking the chow mein noodles.
Alternatively, you can use two spoons—one large and one small—for scooping to better retain the ‘haystack’ shape of the cookies.
