Preparation Time | 10-15 minutes |
Cooking Time | 24 hours (freezing time) |
Total Time | 24 hours 10-15 minutes |
Level of Difficulty | Easy |
Ingredients
- 3/4 cup full-fat milk
- 2 tablespoons instant vanilla pudding powder
- 2 tablespoons sugar (or preferred sweetener, like monk fruit)
- 1 teaspoon vanilla essence
- 1 cup small-curd cottage cheese (whole milk)
Step 1: Prepare the Mixture
In a small bowl or large liquid measuring cup, combine 3/4 cup whole milk and 2 tablespoons instant vanilla pudding mix.
Whisk until the pudding mix is fully dissolved.
Then, add 2 tablespoons of sugar (or your sweetener of choice) and 1 teaspoon of vanilla extract, whisking again to combine the ingredients thoroughly.
Step 2: Incorporate Cottage Cheese
Add 1 cup of small-curd whole milk cottage cheese to the mixture.
Mix well to ensure all ingredients are evenly incorporated.
This mixture forms the base of your high-protein vanilla ice cream.
Step 3: Freeze the Mixture
Carefully transfer the mixture to a Ninja Creami pint, ensuring not to exceed the max fill line.
Close the lid tightly and place the pint on a level surface in your freezer.
Freeze for at least 24 hours to allow the mixture to solidify completely.
Step 4: Process in the Ninja Creami
After 24 hours, remove the pint from the freezer and take off the lid.
Place the pint into the outer bowl apparatus and secure the lid.
Insert the outer bowl into the Ninja Creami machine and select the Ice Cream function.
Allow the machine to process the frozen mixture.
Step 5: Adjust the Texture
Once the Ninja Creami has processed the ice cream, remove the pint and check the texture.
If the ice cream appears crumbly, return it to the machine and use the Re-spin function.
If the texture is still crumbly after the first Re-spin, add 1 tablespoon of milk and Re-spin again until the desired creamy consistency is achieved.
Step 6: Optional Mix-Ins
If you wish to add a mix-in (such as chocolate chips or fruit), create a well in the center of the pint approximately 1/2-inch wide and extending to the bottom.
Place your mix-in ingredients into the well and process again using the Mix-in function on the Ninja Creami machine.
Once complete, your high-protein vanilla ice cream is ready to enjoy!
