Ingredients

  • 16 oz cottage cheese (full fat)
  • 1/4 cup honey
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons chocolate chips
  • 1 tablespoon dry roasted peanuts (optional)

Step 1: Gather and Prepare Ingredients

Start by gathering all your ingredients: 16 oz cottage cheese (full-fat), ¼ cup honey, 2 tablespoons creamy peanut butter, 2 tablespoons chocolate chips, and 1 tablespoon dry roasted peanuts (optional).

Lightly spray a measuring cup with cooking spray to help with pouring sticky ingredients more easily.

Step 2: Blend the Mixture

In a food processor, add the entire container of cottage cheese.

Measure out ¼ cup of honey using the prepared measuring cup, and add it to the food processor.

Use the same method to measure and add 2 tablespoons of creamy peanut butter.

Toss in 2 tablespoons of chocolate chips, and if you like, add 1 tablespoon of dry roasted peanuts.

Step 3: Process Until Smooth

Secure the lid on your food processor and blend the mixture for about 45 seconds or until it becomes smooth and creamy.

Ensure there are no lumps and the mixture is evenly blended.

Step 4: Freeze the Mixture

Transfer the creamy mixture to a freezer-safe container, spreading it out evenly.

Cover the container with a lid and place it in the freezer for about 4 hours or overnight to let it set completely.

Step 5: Serve and Enjoy

When you’re ready to serve, remove the container from the freezer and let it sit at room temperature for about 3-5 minutes to soften slightly.

Use an ice cream scoop to portion the ice cream into bowls.

Optionally, you can top with additional nuts and chocolate chips before enjoying your delicious, high-protein treat!
