Ingredients

  • 1 large pineapple, peeled and cut into cubes
  • 200 grams cottage cheese, cut into cubes
  • 1 medium yellow bell pepper, cut into cubes
  • 1 medium green bell pepper, cut into cubes
  • 1 medium red bell pepper, cut into cubes
  • 1 tablespoon chopped garlic
  • 1½ teaspoons mustard paste
  • ¾ cup chipotle in adobo sauce
  • 1 tablespoon oil + for grilling
  • Salt to taste
  • A few fresh iceberg lettuce leaves
  • Mixed bell pepper juliennes for garnishing
  • 4-5 green tomatoes
  • 3-4 fresh jalapenos
  • 1-2 medium onions, halved with skin
  • 15-20 garlic cloves with skin
  • 1 tablespoon oil

Step 1: Roast the Vegetables

Preheat your oven to 230°C (450°F).

Prepare a baking tray by placing whole green tomatoes, halved onions, fresh jalapenos, and garlic cloves on it.

Drizzle them with oil and sprinkle with salt.

Roast the tray in the preheated oven for 30-35 minutes.

After 15 minutes, remove the onions, jalapenos, and garlic cloves, and continue roasting the green tomatoes for an additional 20 minutes.

Once the vegetables are roasted and slightly cooled, discard the skins of the onion and garlic.

Blend the roasted tomatoes, jalapenos, onion, and garlic together into a chunky salsa.
