Preparation Time | 20-30 minutes |
Cooking Time | 30-50 minutes |
Total Time | 50-80 minutes |
Level of Difficulty | Medium |
Ingredients
- 1 large pineapple, peeled and cut into cubes
- 200 grams cottage cheese, cut into cubes
- 1 medium yellow bell pepper, cut into cubes
- 1 medium green bell pepper, cut into cubes
- 1 medium red bell pepper, cut into cubes
- 1 tablespoon chopped garlic
- 1½ teaspoons mustard paste
- ¾ cup chipotle in adobo sauce
- 1 tablespoon oil + for grilling
- Salt to taste
- A few fresh iceberg lettuce leaves
- Mixed bell pepper juliennes for garnishing
- 4-5 green tomatoes
- 3-4 fresh jalapenos
- 1-2 medium onions, halved with skin
- 15-20 garlic cloves with skin
- 1 tablespoon oil
- Salt to taste
Step 1: Roast the Vegetables
Preheat your oven to 230°C (450°F).
Prepare a baking tray by placing whole green tomatoes, halved onions, fresh jalapenos, and garlic cloves on it.
Drizzle them with oil and sprinkle with salt.
Roast the tray in the preheated oven for 30-35 minutes.
After 15 minutes, remove the onions, jalapenos, and garlic cloves, and continue roasting the green tomatoes for an additional 20 minutes.
Step 2: Make the Green Tomato Salsa
Once the vegetables are roasted and slightly cooled, discard the skins of the onion and garlic.
Blend the roasted tomatoes, jalapenos, onion, and garlic together into a chunky salsa.
Place the salsa in the refrigerator to chill while you prepare the skewers.
Step 3: Assemble and Marinate the Skewers
Assemble the skewers by alternating cubed pineapple, cottage cheese, and bell pepper cubes on 8-inch skewers.
In a bowl, combine chopped garlic, mustard paste, chipotle in adobo sauce, 1 tablespoon of oil, and salt.
Whisk well to create the marinade.
Brush the assembled skewers with the marinade and let them sit for 10-15 minutes to absorb the flavors.
Step 4: Grill the Skewers
Heat some oil in a non-stick grill pan over medium heat.
Place the marinated skewers in the pan and grill them until they are evenly cooked on all sides.
Turn the skewers occasionally to ensure even cooking and a nice char.
Step 5: Prepare the Salad and Serve
Tear fresh Iceberg lettuce leaves and place them on a serving plate.
Top the lettuce with mixed bell pepper juliennes.
Arrange the grilled skewers on the plate and serve immediately with the chilled green tomato salsa on the side.
Enjoy your delicious and healthy meal!
