Easy Shrimp and Grits Casserole

Ingredients

  • 1 lb shrimp
  • 1 cup grits
  • 2 eggs (beaten)
  • 2 cups stock or broth
  • 2 cups half & half or cream
  • 4 oz cream cheese
  • 1 onion (diced)
  • 8 oz cheese (your favorite)
  • 2 – 4 tbsp butter
  • 1 – 2 tbsp ev olive oil
  • Black pepper (to taste)
  • Smoked paprika (for topping)

Step 1: Preheat and Boil the Stock

Preheat your oven to 425°F to 450°F (220°C to 230°C).

Meanwhile, in a pan, combine 2 cups of chicken stock or broth and bring it to a boil.

Step 2: Cook the Grits

Gradually add 1 cup of yellow grits to the boiling stock, stirring frequently to prevent lumps.

Reduce the heat to medium-high and cook the grits for about 15 to 20 minutes, stirring occasionally.

If the grits become too thick, you can add a little more cream, milk, or stock to achieve the desired consistency.

Step 3: Sauté the Onions and Shrimp

In a separate pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.

Add 1 diced onion and sauté until it becomes translucent.

Once the onion is ready, add 1 pound of shrimp and cook them briefly until they are heated through.
