Ingredients
- 2 tablespoons canola oil
- 1 large onion (sliced into thin wedges)
- 2 tablespoons freshly grated ginger
- 1 carrot (cut into small cubes)
- 2 tablespoons tomato paste
- 2/3 cup red wine
- 1 2/3 cups vegetable juice (such as tomato or beetroot)
- 1 2/3 cups vegetable broth
- 2 cups trimmed green asparagus
- 5 tomatoes (chopped)
- Cayenne pepper to taste
- 1 teaspoon sumac
Step 1: Sauté Aromatics
Heat oil in a large pan over medium heat.
Add chopped onion, minced ginger, and diced carrot.
Sauté the mixture until the onion becomes translucent and the vegetables begin to soften.
Stir in tomato purée and cook together briefly until the tomato purée integrates well and starts to darken slightly.
Step 2: Deglaze and Add Liquids
Deglaze the pan by pouring in wine, scraping the bottom to release any browned bits.
Pour in the vegetable juice and stock, then bring the mixture to a boil.
Reduce the heat and let it simmer for around 5 minutes to allow the flavors to meld.
Step 3: Prepare and Cook the Asparagus
Peel the lower third of the asparagus if necessary and remove the hard ends.
Cut the asparagus into 5 cm lengths.
Add the asparagus to the simmering soup and cook for 5-7 minutes until tender.
Add diced tomatoes for the last 2 minutes of cooking.
If the soup seems too thick, add more stock accordingly.
Step 4: Season and Serve
Season the soup to taste with salt, ground black pepper, and a pinch of sumac.
Stir well to incorporate the seasonings.
