Easy Tomato Soup and Rice

Ingredients

  • 1.5 tablespoons olive oil
  • 2 to 3 diced green onion stalks (roots removed)
  • 2 to 3 tablespoons finely chopped garlic
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 tablespoon dried basil
  • 1 cup rinsed and drained basmati rice
  • 2 tablespoons tomato paste
  • 0.5 tablespoon sugar
  • 28 ounces canned diced tomatoes (796 ml)
  • 4.5 cups low sodium broth (vegetable or chicken)

Step 1: Saute the Aromatics

Heat 1½ tablespoons of oil in a Dutch oven (or a large heavy-bottom pot) over medium heat.

Add the green onions and sauté for a minute.

Then, add the garlic and sauté for another minute.

Sprinkle in the salt, garlic powder, and dried basil, stirring until everything is well combined and fragrant.

Step 2: Incorporate the Rice

Add the rinsed rice to the pot and sauté for about a minute until all the ingredients are well mixed.

If necessary, deglaze the pan with a bit of broth to prevent sticking and enhance flavor.

Step 3: Add Tomato Paste and Sugar

Stir in the tomato paste along with the sugar.

Sauté for another minute, ensuring the paste and sugar are well blended with the other ingredients.

Step 4: Introduce Tomatoes and Broth

Pour in the canned diced tomatoes and the broth.

Stir well and bring the mixture to a simmer.

Make sure to keep stirring occasionally to prevent any sticking at the bottom of the pot.

Step 5: Simmer the Soup

Once the mixture reaches a simmer, cover the pot with a lid, but continue to stir occasionally.

Let the soup simmer for 15 to 20 minutes or until the rice is fully cooked and tender.

Check periodically and, if needed, add a bit more broth to maintain the desired consistency.

Step 6: Final Seasoning and Serve

Add additional salt and some freshly cracked pepper to taste before serving.
