Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 celery stalks, chopped
  • 2 cans (15 oz each) diced tomatoes
  • 1 zucchini, peeled or unpeeled (or substitute with 1 large carrot)
  • 1 1/2 – 2 cups vegetable stock
  • 1 tablespoon tomato concentrate
  • 1 teaspoon mixed italian herbs
  • 1 tablespoon pure maple syrup
  • Salt and pepper, to taste
  • Toppings of your choice

Step 1: Prepare the Vegetables

Finely dice the onion, garlic, and celery stalk.

This will ensure they cook evenly and contribute to a smooth, well-blended soup.

Step 2: Sauté the Aromatics

Heat 1 tablespoon of olive oil in a large saucepan or soup pot over medium heat.

Add the diced onion, garlic, and celery to the pot.
