Ingredients
- 1 tablespoon olive oil
- 3 small yellow onions, diced (about 2 cups)
- 1 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 4 cloves garlic, minced
- 3 cups water, separated
- 4 cups fresh cherry tomatoes
Step 1: Caramelize the Onions
In a large pot, heat a generous amount of olive oil over medium-low heat.
Add chopped onions, a pinch of salt, and some freshly ground black pepper.
Cook the onions until they are soft and caramelized, stirring occasionally for about 20-30 minutes.
This slow cooking will bring out their natural sweetness.
Step 2: Add Garlic and Deglaze
Once the onions are caramelized, add minced garlic to the pot and stir until the garlic becomes fragrant, which should take about 1 minute.
Pour in 1/2 cup of water and stir to deglaze the pot, making sure to scrape up any browned bits stuck to the bottom.
Step 3: Add Tomatoes and Simmer
Stir in the remaining water along with chopped tomatoes.
Increase the heat to medium-high and bring the mixture to a simmer.
Allow it to cook for 20-30 minutes, stirring occasionally, until the tomatoes are very soft and have broken down significantly.
Step 4: Blend and Serve
Remove the pot from heat and use an immersion blender to blend the soup until it is smooth.
