Ingredients
- 1 box yellow cake mix (15.25 oz)
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla essence
- 1/4 cup granulated sugar
- 1/2 cup holiday sprinkles
Step 1: Prepare the Cookie Dough
In a large mixing bowl, combine cake mix, oil, eggs, and vanilla extract.
Mix until a thick dough forms.
Once combined, cover the dough and place it in the fridge to chill for 1 hour.
This will make the dough easier to handle and shape.
Step 2: Preheat the Oven and Prepare the Baking Sheet
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
While the oven is heating, prepare a baking sheet by lining it with parchment paper.
This will prevent the cookies from sticking and make cleanup easier.
Step 3: Shape and Coat the Dough
Once the dough has chilled, remove it from the fridge.
Roll the cookie dough into small balls, then roll each ball in sugar so that it is evenly coated.
Place each sugar-coated ball onto your prepared baking sheet, spacing them a couple of inches apart to allow for spreading.
Step 4: Add Sprinkles and Bake
Top each cookie dough ball with Christmas sprinkles, pressing slightly to ensure they stick.
Bake the cookies in your preheated oven for 9-10 minutes, or until the edges are lightly golden.
Be careful not to overbake, as the cookies will continue to set as they cool.
Step 5: Cool the Cookies
Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 1 minute.
This helps them firm up enough to handle.
Then, transfer the cookies to a cooling rack to cool completely.
