Today, I’m excited to share my go-to recipe for cottage cheese kale pasta.
It’s creamy, healthy, and packed with flavor. Plus, it’s super easy to whip up on a busy weeknight.

Ingredients
For the pasta:
- 12 oz short pasta
For the sauce:
- 2 green onions
- 1/2 tsp kosher salt
- 2 tbsp olive oil (good quality extra virgin)
- 1/2 tsp ground black pepper
- 1/3 cup grated parmesan cheese (freshly grated for best flavor)
- 1/2 cup cottage cheese (full-fat for creaminess)
- 5 oz baby kale (washed well)
For serving:
- extra grated parmesan cheese
- ground black pepper
Step 1: Cook the Pasta
Start by cooking the short pasta according to the package directions.
Before draining, reserve 1/2 cup of the cooking water.
Drain the pasta and return it to the pot to keep it warm.
Step 2: Prep the Kale and Scallions
While the pasta is cooking, place the scallions and 3 cups of baby kale in a food processor.
Pulse until they are finely chopped, ensuring an even consistency for the sauce.
Step 3: Make the Sauce
Add the cottage cheese, grated Parmesan, and 1/2 teaspoon each of salt and pepper to the food processor with the chopped kale and scallions.
Pulse to combine the ingredients.
Scrape down the sides of the food processor, and with the machine running, gradually add the extra-virgin olive oil.
Continue to puree the mixture until it is smooth and well blended.
Step 4: Combine Pasta and Sauce
Toss the cooked pasta with the prepared sauce, ensuring the pasta is evenly coated.
Add the remaining 3 cups of baby kale to the pasta.
Toss everything together, adding a couple of tablespoons of the reserved pasta water as necessary to help the kale wilt and to achieve the desired sauce consistency.
Step 5: Serve and Garnish
Once the kale has wilted and the pasta is well coated with the sauce, transfer it to serving dishes.
Top each serving with additional grated Parmesan and freshly cracked pepper to taste.
