Today, I’m sharing my go-to recipe for cottage cheese zucchini muffins.
These muffins are moist, tasty, and packed with hidden veggies.

Ingredients
- 1 medium zucchini, grated
- 2 large eggs
- Salt & pepper to taste
- 1/4 red bell pepper, finely diced (optional)
- 1 cup grated cheese
- 125 g (1 cup) all-purpose flour
- 1 tsp baking powder
- Butter for greasing the muffin tin
Step 1: Preheat the Oven and Prepare Ingredients
Begin by preheating your oven to 200°C (392°F).
While the oven is heating, grate 1 medium zucchini without squeezing out the moisture and finely dice 1/4 of a red capsicum, if using.
Step 2: Mix the Vegetables and Cheese
In a mixing bowl, combine the grated zucchini, diced capsicum (if using), and 1 cup of grated cheese.
Stir these ingredients together until well mixed.
Step 3: Add Eggs and Seasonings
Add 2 large eggs to the vegetable and cheese mixture.
Season with salt and pepper to taste, and include any other spices you prefer.
Mix everything together until the eggs are well incorporated.
Step 4: Incorporate Dry Ingredients
Gradually mix in 125 grams (1 cup) of all-purpose flour, starting with half of it.
Add 1 teaspoon of baking powder to the mixture and stir until well combined.
Continue to add the remaining flour until the batter is consistent.
Step 5: Prepare and Fill the Muffin Tin
Grease a muffin tin with butter to prevent the muffins from sticking.
Fill each muffin cup with the batter until they are almost full.
Step 6: Bake the Muffins
Place the muffin tin in the preheated oven and bake for about 25 minutes or until the muffins are golden brown.
Remove from the oven and allow the muffins to cool slightly before serving.
