For the beef stew chunks, lean pork or chicken thighs can be used as alternatives. These options maintain the dish’s protein content while offering different flavor profiles. Adjust cooking times accordingly, as pork and chicken may cook faster than beef.

Avocado or olive oil can be replaced with coconut oil or ghee. These substitutions keep the dish keto-friendly while providing different flavor notes. Use the same amount as called for in the recipe.

Red wine can be substituted with additional beef stock or a mixture of stock and red wine vinegar for those avoiding alcohol. Use 1/2 cup beef stock or 1/4 cup stock mixed with 1/4 cup red wine vinegar to maintain depth of flavor without compromising the dish’s low-carb nature. If using vinegar, add it gradually and taste to avoid overpowering acidity.

Ingredients

  • 2 pounds beef stew chunks (1 inch pieces)
  • Salt
  • Pepper
  • 3 tablespoons avocado or olive oil, divided
  • 1/2 cup chopped onion
  • 1 stalk celery, sliced
  • 2 tablespoons fresh rosemary or thyme, chopped
  • 1 tablespoon tomato paste
  • 2 cloves garlic, finely chopped
  • 1/2 cup red wine
  • 1 cup beef stock
  • 1 medium zucchini, diced
  • 1 small turnip, diced
  • 1/2 small carrot, diced (if desired)
  • 1/2 teaspoon glucomannan

Step 1: Prepare the Beef and Preheat the Oven

Start by preheating your oven to 325°F (163°C).

Pat the beef dry with paper towels to remove excess moisture, then sprinkle generously with salt and pepper to season.

This will help the beef achieve a nice crust when browned.

Step 2: Brown the Beef

Add 1 tablespoon of oil to a Dutch oven set over medium heat.

When the oil is hot, add half of the beef.

Cook, stirring occasionally, until the beef is browned on all sides.

Transfer the browned beef to a bowl.

Add another tablespoon of oil to the Dutch oven and repeat the browning process with the remaining beef.

Once done, set all the browned beef aside.

Step 3: Sauté Aromatics

Stir in rosemary, tomato paste, and garlic, cooking for about 1 more minute until fragrant.

Step 4: Build and Simmer the Stew

Pour in the wine and cook until it’s reduced by half, about 2 minutes.

Stir in the beef broth and bring the mixture to a simmer.

Add the browned beef and any accumulated juices back into the Dutch oven.

Stir to combine all the ingredients.

Step 5: Oven Cooking the Stew

Cover the Dutch oven with a tight-fitting lid and transfer it to your preheated oven.

Let it cook for 1 hour.

This will tenderize the beef and meld the flavors.

Step 6: Add Vegetables and Finish Cooking

After 1 hour, remove the pot from the oven and add the zucchini, turnip, and carrots.

Stir to combine the vegetables with the beef and broth.

Return the pot to the oven and continue cooking for another 30 to 45 minutes, or until the vegetables are tender.

Step 7: Thicken and Finalize the Stew

To thicken the broth and enhance the stew’s richness, push some of the meat and vegetables to one side of the pot and give the broth a stir.

You can mash a few pieces of vegetables into the broth using a fork or a potato masher until it reaches your desired consistency.
