Hey there, friends!
Are you in the mood for something fun and flavorful?
I’ve got a fantastic recipe for you today: baked salmon nuggets!
They’re crispy on the outside, tender on the inside, and loaded with goodness.
Perfect for a quick dinner or a tasty snack!
You won’t need a fancy chef hat for this one—just some simple ingredients and a little bit of time.
Let’s dive in!
Ingredient Substitutions
Salmon fillets can be replaced with firm white fish like cod or halibut for a milder flavor, or with chicken breast for a non-seafood option. Adjust cooking time as needed, as chicken may require longer baking. For a plant-based alternative, try extra-firm tofu, pressed and cut into nugget-sized pieces.
All-purpose flour can be substituted with almond flour or coconut flour for a gluten-free, low-carb option. Use slightly less almond or coconut flour, as they absorb more moisture than wheat flour.
Panko bread crumbs can be replaced with crushed pork rinds for a low-carb alternative, or with crushed cornflakes for a gluten-free option. Both substitutes will provide a similar crunchy texture. If using pork rinds, reduce or omit the added salt in the recipe to avoid over-salting.

Ingredients
- 1 lb salmon fillets, sliced in 1″ thick pieces, skin off
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 eggs
- 1 cup grated parmesan cheese
- 1 cup panko bread crumbs
- Olive oil for spraying
Step 1: Prepare the Salmon and Preheat the Oven
First, preheat your oven to 450°F (232°C).
If you’re using frozen salmon, make sure it’s completely thawed.
Once thawed, pat the salmon dry with a paper towel to remove excess moisture.
Next, cut the salmon fillets into 1-inch thick nugget-sized pieces, removing the skin if necessary.
Step 2: Prepare Dredging Stations
Set up three bowls for the dredging process.
In the first bowl, combine 1/2 cup of all-purpose flour with 1/2 teaspoon of salt and ¼ teaspoon of ground black pepper.
In the second bowl, beat 3 eggs until they are smooth.
In the third bowl, mix together 1 cup of Panko bread crumbs with 1 cup of grated Parmesan cheese.
Step 3: Coat the Salmon Nuggets
Begin by dredging each salmon nugget in the seasoned flour, ensuring it’s fully coated.
Next, dip the floured salmon nugget into the egg wash, allowing any excess egg to drip off.
Finally, coat the nugget in the Panko and Parmesan mixture, pressing gently so that the coating adheres well to the salmon.
Step 4: Arrange Nuggets for Baking
Place the coated salmon nuggets onto a baking sheet in a single layer.
If you desire extra crispiness, you can optionally spray the nuggets lightly with olive oil to help them crisp up during baking.
Step 5: Bake and Serve
Bake the salmon nuggets in the preheated oven for 15-20 minutes, or until they are golden brown and crispy.
Once cooked to your liking, remove them from the oven and let them cool slightly before serving.
Enjoy the crispy baked salmon nuggets as a delicious meal or appetizer!
