Ingredients
- 1 cup homemade paneer (cottage cheese)
- 2 tablespoons extra virgin olive oil
- 2 additional tablespoons extra virgin olive oil for added flavor
- 2 grated garlic cloves
- 7 pitted and chopped black olives
- 1 finely chopped red bell pepper (capsicum)
- Salt to taste
- Cayenne pepper to taste
Step 1: Roast the Red Bell Peppers
Begin by heating 2 tablespoons of olive oil in a small wok over medium-high heat.
Add the chopped red bell peppers and sprinkle a pinch of salt.
Stir fry the peppers until they have slightly softened.
If you prefer, you can also add the olives during this step.
Step 2: Prepare the Cottage Cheese
While the peppers are cooking, focus on preparing the cottage cheese.
Crumble the cottage cheese and ensure it is moist and creamy without having excess water.
If there’s too much water, drain it off.
Whisk the cottage cheese well to achieve a smooth texture that will blend seamlessly into the dip.
Step 3: Combine Ingredients
In a mixing bowl, combine the mashed cottage cheese, roasted peppers, 1 additional tablespoon of olive oil, and all other ingredients.
Stir the mixture well, adjusting salt and spice levels to taste.
If you haven’t added the olives earlier, now is the time to do so.
Step 4: Chill the Dip
Once the ingredients are well-combined, transfer the dip into a container and refrigerate it.
If you are not serving immediately, the dip can be refrigerated for a couple of days, allowing the flavors to meld together.
Step 5: Serve and Enjoy
When ready to serve, bring out the Cottage Cheese Dip and pair it with warm crusted garlic buttered bread.
