- pitted dates (about 12-15 Medjool dates)
- 1/8 cup sugar (or honey for a slightly different flavor)
For the ice cream base:
- cottage cheese (I use Good Culture 4% milkfat for creaminess)
Step 1: Prepare the Dates
Start by peeling the dates in half and removing the pits.
Once the dates are prepared, soak them in boiling water and set them aside to soften while you continue with the recipe.
Step 2: Make the Date Paste
In a food processor, add about 1/8 cup of sugar, honey, or maple syrup.
After the dates have soaked, drain the water from them and add the softened dates to the food processor.
Blend the mixture until it becomes a smooth date paste.
Step 3: Combine with Cottage Cheese
In a separate container, add the cottage cheese.
Mix the date paste into the cottage cheese, swirling it around to combine thoroughly.
Ensure that the date paste is evenly distributed throughout the cottage cheese.
Step 4: Freeze the Mixture
Cover the container with the cottage cheese and date mixture and place it in the freezer.
Allow it to freeze for 1 to 2 hours, which will help achieve the right texture for your ice cream.
