- 1 cup white sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon fresh lemon juice
- 1 (12 fluid ounce) can evaporated milk
- 1 (16 ounce) package small curd cottage cheese
- 2 (9 inch) pie shells
- 3 egg yolks
- 3 egg whites
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 ½ cups whole milk
- 2 tablespoons butter, melted
- 1 teaspoon cinnamon (optional)
Step 1: Preheat and Prepare
Begin by preheating your oven to 425°F.
While the oven is heating, drain the cottage cheese for 20-30 minutes to remove any excess liquid.
This will help ensure a smooth filling for your pie.
Step 2: Mix the Filling Ingredients
In a large bowl, combine the drained cottage cheese, sugar, flour, lemon juice, vanilla, salt, egg yolks, evaporated milk, and whole milk.
