Preparation Time 15-60 minutes
Cooking Time 35-40 minutes
Total Time 50-100 minutes
Level of Difficulty Medium

Ingredients

  • 12 large eggs
  • 1/2 cup plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups cottage cheese (1 pint)
  • 3 cups grated mexican cheese blend
  • 6 tablespoons melted salted butter
  • 8 ounces mild chopped green chilies

Step 1: Prepare the Baking Dish and Preheat the Oven

Begin by preheating your oven to 350°F (175°C).

While the oven is heating up, butter a 9×13-inch baking dish to ensure the casserole doesn’t stick during baking.

Step 2: Beat the Eggs

In a large bowl, use an electric hand mixer or a stand mixer to beat the eggs until they are light and frothy.

This will provide a fluffy texture to your casserole.

Step 3: Add Dry Ingredients and Mix

Add the flour, baking powder, and a pinch of salt to the beaten eggs.

Mix these dry ingredients in well with the eggs to ensure there are no lumps.

Step 4: Incorporate Cheese and Other Ingredients

Gently stir in the cottage cheese, Mexican cheese blend, melted butter, and diced green chilies until everything is combined evenly.

Make sure the mixture is well-mixed for an even distribution of flavors.

Step 5: Pour and Bake

Pour the prepared mixture into the buttered 9×13-inch baking dish.

You have the option to either bake it immediately or cover it and refrigerate overnight for convenience.

If you choose to bake immediately, place the dish in the preheated oven.

Step 6: Bake and Serve

Bake the casserole uncovered for 35-40 minutes or until the edges are browned, and the center is set and firm.

Once done, remove the dish from the oven and let it cool for about 5 minutes.

Cut into portions and serve warm.

Enjoy your delicious homemade casserole!
