Ingredients
- 1 pound bacon, chopped
- 1 diced onion
- 8 eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon hot sauce (optional)
- 4 cups thawed frozen hash browns
- 2 cups shredded sharp cheddar cheese (8 oz)
- 1 1/2 cups shredded swiss or gruyere cheese (6 oz)
- 2 cups small curd cottage cheese (16 oz, 4% or 1% fat)
- Chopped fresh chives (optional, for garnish)
Step 1: Preheat the Oven and Prepare the Baking Dish
Preheat your oven to 350°F (175°C).
Grease a 9 x 13 baking dish with cooking spray or butter and set it aside for later use.
Step 2: Cook the Bacon and Onions
In a large skillet, add diced bacon and cook over medium heat until it becomes crispy.
Once the bacon is crispy, add diced onions to the skillet and cook until they become translucent.
Remove the skillet from the heat and drain the bacon and onions on a paper towel to remove excess grease.
Step 3: Prepare the Egg Mixture
