Today, I’m sharing my go-to recipe for cottage cheese hard-boiled egg toast.
It’s creamy, protein-packed, and super satisfying.

Ingredients
For the base:
- 1 slice toasted bread
- 1/4 cup cottage cheese (I like Daisy brand)
Choose one of these toppings:
- 1/4 sliced avocado (ripe, but not mushy)
- 1 tbsp black olive tapenade
- 1 tbsp peanut butter (choose natural for less added sugar)
- 1/3 sliced banana
- 1/4 cup mixed berries (fresh or frozen and thawed)
- 1/4 tsp red pepper flakes
- 1/2 tsp everything bagel seasoning
- 1 hard-boiled egg, sliced (firmly cooked egg whites are best)
- 1 tbsp thinly sliced red onion
- pinch of cinnamon
- pinch of flaky sea salt
- fresh dill sprigs
- 1 tbsp almond butter
- pinch of flaky sea salt and black pepper
- 1 to 2 oz smoked salmon
- sliced cherry tomatoes
- sliced cucumbers
- 1 tbsp capers
Step 1: Toast the Bread
Toast a slice of sprouted grain bread or your preferred bread until it is lightly browned or to your desired doneness.
Set it aside to cool slightly while you prepare the toppings.
Step 2: Spread on the Base Layer
If you are using nut butter or tapenade, spread it over the toasted bread first.
Afterward, spread 1/4 cup of cottage cheese evenly over the bread.
Step 3: Choose and Add Your Toppings
Select one of the following delicious topping combinations to complete your toast:
Almond Butter & Berry
- Spread 1 tablespoon of almond butter over the cottage cheese.
- Add 1/4 cup of mixed berries, such as raspberries, blueberries, or strawberries, on top.
Peanut Butter Banana
- Spread 1 tablespoon of natural peanut butter over the cottage cheese.
- Top with 1/3 banana, sliced, and sprinkle with a dash of cinnamon.
Hard Boiled Egg
- Place slices of 1 hard-boiled egg on top of the cottage cheese.
- Sprinkle with 1/2 teaspoon of everything bagel seasoning for extra flavor.
Avocado & Red Pepper Flakes
- Add slices of 1/4 avocado on top of the cottage cheese.
- Sprinkle with 1/4 teaspoon of red pepper flakes for a hint of spice.
Step 4: Serve and Enjoy
Once your toppings are added, your cottage cheese toast is ready to serve!
