Ingredients
- 3 large eggs
- 1/3 cup cottage cheese (100g), split
- 2 tablespoons grated parmesan (20g)
- 1/8 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 teaspoons olive oil
- 2 teaspoons finely chopped chives
Step 1: Prepare the Egg Mixture
Crack the eggs into a large mixing bowl.
Add 2 tablespoons of cottage cheese, all the Parmesan cheese, salt, and pepper.
Use an electric mixer to whisk the ingredients until the mixture is smooth and fluffy.
Step 2: Cook the Egg Mixture
In a 9-inch non-stick frying pan, heat the olive oil over medium/low heat.
Once the oil is hot, pour the egg mixture into the pan and swirl it around to coat the bottom evenly.
Cook the egg mixture for 7-8 minutes, or until the edges are mostly set but the top is still soft.
To speed up cooking, gently tilt the pan and lift the edges to allow the uncooked egg to flow underneath.
Step 3: Add Cottage Cheese and Fold
Spoon the remaining cottage cheese onto one half of the omelette.
Carefully fold the omelette over to cover the cottage cheese.
Keep the omelette in the pan for another minute, allowing the cottage cheese to become lukewarm.
Step 4: Serve the Omelette
Slide the cooked omelette onto a plate.
Top with freshly chopped chives for garnish.
