Ingredients

For the pancakes:

  • butter for frying
  • 1/2 cup rolled oats
  • 1/2 cup cottage cheese (I use Daisy brand, 4% milkfat)
  • 3 eggs (large, at room temperature)

For the topping:

  • frozen berries (mixed berries work well)
  • maple syrup (pure maple syrup for best flavor)
  • peanut butter

Step 1: Gather and Blend Ingredients

Start by gathering the ingredients: ½ cup of oats, ½ cup of cottage cheese, and 3 eggs.

Combine these ingredients in a blender.

Blend the mixture for 20 to 30 seconds until smooth and well-mixed.

 

Step 2: Prepare the Pan

Heat a small knob of butter in a frying pan over medium heat (setting 4 or 5 on an electric stove).

Allow the butter to melt and coat the pan evenly.

 

Step 3: Cook the Pancake

Pour the pancake batter into the pan.

If you have a lid available, cover the pan to help cook the top of the pancake more evenly.

Cook the pancake for about 9 minutes, until bubbles form on the surface and the edges appear firm.

Carefully flip the pancake and cook for an additional 1 to 2 minutes until fully cooked.
