| Preparation Time | 10-15 minutes |
| Cooking Time | 60-70 minutes |
| Total Time | 70-85 minutes |
| Level of Difficulty | Easy |
Ingredients
- 1/4 cup diced onion
- 1 cup finely chopped walnuts
- 1 package dry onion soup mix
- 1 container cottage cheese (I prefer Hood 4% Small Curd)
- 1/4 cup vegetable oil
- 1 1/2 to 2 1/2 cups corn flakes cereal (crushed slightly for better binding)
- 4 large eggs
Step 1: Preheat and Prepare
Start by preheating your oven to 350°F (175°C).
While the oven is heating, grease a loaf pan to ensure your cottage cheese roast doesn’t stick.
Step 2: Mix Ingredients
In a large bowl, combine the following ingredients: cottage cheese, beaten eggs, vegetable oil, dry onion soup mix, finely chopped walnuts, corn flakes, and chopped onion.
Stir until all the ingredients are well-mixed and evenly distributed.
Step 3: Fill the Loaf Pan and Bake
Spoon the prepared mixture into the greased loaf pan, spreading it out evenly.
Place the loaf pan in the preheated oven and bake for 60 to 70 minutes, or until the top is golden and a knife inserted in the center comes out clean.
Step 4: Rest and Serve
Once the cottage cheese roast is done baking, let it rest for 5 to 10 minutes in the loaf pan.
This resting period allows the flavors to meld and makes it easier to handle.
Finally, turn the loaf out onto a serving platter.
Slice and serve hot.
