It’s super easy to whip up and tastes just like the classic version.

Ingredients
For the base:
- 1 jar marinara sauce (24 oz, I like Rao’s Homemade)
- 1/2 yellow onion (finely chopped)
- 1 tbsp Italian herbs
- 1/2 tsp kosher salt
- 8 oz uncooked lasagna noodles
- 1 tbsp garlic (freshly minced for best flavor)
- 1 zucchini (chopped into 1/2-inch pieces)
- 1 1/2 cups water
- 1 tsp olive oil (or avocado oil for a neutral flavor)
- 1 lb ground turkey
For the topping:
- 1 cup cottage cheese
- 1 cup shredded low-fat mozzarella
Step 1: Sauté the Turkey and Vegetables
Place a large skillet or cast iron pan on the stove over medium heat.
Once the pan is hot, add 1 teaspoon of olive or avocado oil.
Add 1 pound of lean ground turkey, ½ diced yellow onion, 1 diced zucchini, 1 tablespoon of minced garlic, ½ teaspoon of kosher salt, and 1 tablespoon of Italian seasoning to the pan.
Break up the turkey and stir continually as you cook it for 5-7 minutes, until the turkey is cooked through and the vegetables are softened.
Step 2: Add Marinara Sauce, Water, and Lasagna Noodles
With the turkey and vegetables cooked, break the uncooked lasagna noodles into large pieces.
Add 1 jar (24 oz) of marinara sauce, 1 ½ cups of water, and the broken lasagna noodles to the skillet.
Stir until all ingredients are evenly distributed and the noodles are submerged in the sauce.
Step 3: Simmer the Lasagna
Turn the temperature to low and cover the pan with a lid.
Let the lasagna simmer for 25-35 minutes.
Make sure to stir the mixture every 5 minutes to ensure even cooking and to prevent the noodles from sticking to the bottom of the pan.
Continue simmering until the lasagna noodles are soft and fully cooked.
Step 4: Add Cheese and Serve
Once the lasagna noodles are tender, remove the pan from the heat and take off the lid.
Add 1 cup of cottage cheese and ½ cup of shredded mozzarella cheese to the skillet.
Stir until the mozzarella cheese is melted and evenly distributed throughout the lasagna.
