Tasty Cottage Cheese Zucchini Boats

Today, I’m excited to share my recipe for cottage cheese zucchini boats.

They’re colorful, tasty, and packed with protein. Plus, they make for a super cool presentation!

Perfect for a light dinner or a unique side dish.

Ingredients

  • 1 zucchini
  • Some salt
  • 120g cottage cheese
  • 60g dried tomatoes, preserved in oil
  • Some marjoram
  • Some thyme
  • Some rosemary
  • Some pepper
  • 40g parmesan (or any other strong cheese)
  • 3 cherry tomatoes (optional)
 

Step 1: Prepare the Zucchini

Preheat the oven to 350°F (180°C).

Cut the zucchini in half lengthwise.

Use a teaspoon or melon baller to scoop out the inside of the zucchini, placing the scooped-out pieces in a bowl.

Sprinkle some salt on the inside of the zucchini halves to draw out moisture.

 

Step 2: Bake the Zucchini Halves

Line a baking sheet with parchment paper and place the zucchini halves on it.

Bake the zucchini halves in the preheated oven for about 15 minutes.

This will help soften them before filling.

 

Step 3: Prepare the Filling

While the zucchini halves are baking, finely dice the scooped-out zucchini pieces.

Pat the dried tomatoes with paper towels to remove excess oil, then finely dice them.

Add the diced tomatoes and zucchini pieces to a bowl.

Add the cottage cheese, marjoram, thyme, rosemary, salt, and pepper to the mixture.

Stir to combine all the filling ingredients well.

 

Step 4: Add Filling and Cheese

Grate or slice the parmesan cheese.

Remove the zucchini halves from the oven after 15 minutes.

Carefully fill the zucchini halves with the prepared filling.

Halve the cherry tomatoes and place them on the baking sheet next to the zucchini boats.

Sprinkle the filled zucchini boats with parmesan cheese.

Optionally, reserve some parmesan to sprinkle on the halved cherry tomatoes.

 

Step 5: Bake and Serve

Return the baking sheet to the oven and bake for an additional 15 minutes, or until the parmesan is golden brown.

Once done, remove the zucchini boats from the oven, place the halved cherry tomatoes on top, and serve hot.
