Ingredients
For the casserole base:
- 2 tbsp taco seasoning
- 3 boneless skinless chicken breasts (cut into 1-inch chunks)
- 200g black beans (rinsed and drained well)
- 3 garlic cloves (freshly minced for best flavor)
- 1 small onion (finely chopped for even cooking)
- salt
- 250g diced tomatoes
- ground black pepper (freshly ground preferred)
For the assembly and topping:
- green onions (sliced for garnish)
- taco chips (crushed slightly for topping)
- sour cream (full-fat for rich flavor)
- tex-mex cheese (shredded, I use Sargento)
Step 1: Preheat the Oven and Prepare Ingredients
Preheat your oven to 350°F (177°C).
Gather all your ingredients and equipment so you have everything ready for the cooking process.
Step 2: Cook the Chicken Mixture
Heat oil in a pan over medium-high heat.
Add a small chopped onion and three cloves of chopped garlic to the pan and sauté until fragrant.
Add three boneless, skinless chicken breasts cut into bite-sized pieces to the pan and cook until they are light brown.
Season the chicken with a pouch (about 35 grams) of taco seasoning, salt, and ground black pepper.
Stir to combine everything well.
Step 3: Add Tomatoes and Beans
Add a can (about 250 grams) of undrained diced tomatoes and 200 grams of drained and rinsed black beans to the pan with the chicken.
Stir to mix well and bring the mixture to a boil.
Once it reaches a boiling point, remove the pan from heat.
Step 4: Assemble the Casserole
In a casserole dish, crush some taco chips and spread them evenly at the bottom.
Pour the chicken mixture over the crushed taco chips, ensuring it covers the chips evenly.
Spread a layer of sour cream over the chicken mixture.
Then, top it with Tex-Mex cheese or your favorite cheese.
Step 5: Bake the Casserole
Cover the casserole dish with foil and place it in the preheated oven.
Bake for 25 to 30 minutes, or until the cheese is melted and the casserole is heated through.
Step 6: Garnish and Serve
After baking, remove the casserole dish from the oven and carefully take off the foil.
Garnish with chopped green onions for a fresh and colorful touch.
