Ingredients
For the casserole base:
- 1/2 cup melted butter (I like Kerrygold unsalted butter for this)
- 3 to 4 cups cooked chicken (shredded or diced into 1-inch pieces)
For the dumpling topping:
- 1 cup self-rising flour
- 1/2 tsp black pepper (freshly ground for best flavor)
- 1 cup milk (whole milk for a richer dumpling)
- 1/4 tsp poultry seasoning
For the sauce:
- 1 can condensed herb-flavored cream of chicken soup
- 2 cups chicken broth (low sodium preferred)
Step 1: Preheat the Oven and Prepare the Butter
Preheat your oven to 375°F (190°C).
Place ½ cup of butter in a 9 x 13 casserole or baking dish.
Melt the butter in the microwave in 30-second intervals until fully melted, which should take about 1 minute.
Ensure the butter is spread evenly across the bottom of the dish.
Step 2: Add the Chicken
Spread 3 to 4 cups of cooked, chopped, or shredded chicken evenly over the melted butter in the baking dish.
Make sure the chicken is distributed evenly for the best results.
Step 3: Prepare and Add the Flour Mixture
In a mixing bowl, combine 1 cup of self-rising flour, 1 cup of milk, ¼ teaspoon of poultry seasoning, and ½ teaspoon of black pepper.
Stir well to combine the ingredients.
Pour this mixture evenly over the chicken in the baking dish.
Do not mix or stir; allow the mixture to settle naturally.
Step 4: Prepare and Add the Soup Mixture
Using the same mixing bowl, combine 1 can (10.75 ounces) of condensed cream of chicken soup with herbs and 2 cups of chicken broth.
Mix thoroughly.
Pour this mixture evenly over the flour mixture in the baking dish.
Again, do not mix or stir; allow it to layer naturally.
Step 5: Bake the Casserole
Place the baking dish in the preheated oven and bake for 35 to 45 minutes, or until the filling is bubbly and the top is golden brown.
The baking time may vary, so keep an eye on it towards the end.
Step 6: Let It Rest and Serve
Once the casserole is done baking, let it rest for 5 to 10 minutes before serving.
