Easy Creamy Burrito Casserole Recipe

Ingredients

  • 1 pound minced beef
  • 1 cup chopped yellow onion
  • 2 tablespoons taco seasoning
  • 1 cup black beans from a can, drained and rinsed
  • 1 cup tomato puree
  • 1 cup sour cream
  • 6 medium flour tortillas (7″-8″)
  • 3 ½ cups shredded cheddar cheese
  • ½ cup chopped jalapeño peppers, seeds removed
  • ½ cup chopped red chili peppers, seeds removed
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Step 1: Prepare the Ground Beef Mixture

Preheat the oven to 350°F (175°C).

In a large skillet over medium-high heat, cook the ground beef and chopped onion, crumbling the beef as it cooks.

This should take about 5 to 7 minutes.

Once cooked, drain any excess liquid from the skillet.

Add the Mexican seasoning and black beans to the skillet and heat through.

Season with salt and pepper to taste, then set aside.

Step 2: Prepare the Sauce Mixture

In a medium bowl, mix the tomato sauce with sour cream until well combined.

This mixture will add a creamy and tangy layer to the casserole.

Step 3: Assemble the First Layer

Spread half of the sauce mixture onto the bottom of a 9” x 13” baking dish.

Layer 3 flour tortillas on top, tearing them into smaller pieces and overlapping them until the entire surface is covered.

Top the tortillas with about 1 cup of shredded cheese.

Add a layer of the ground beef mixture, using about half of it.

Step 4: Repeat Layers

Repeat the layering process: spread the remaining sauce mixture over the ground beef.

Add 3 more tortillas, another cup of cheese, and the remaining ground beef mixture.

Step 5: Final Touches and Bake

Top the final layer with the remaining shredded cheese and chopped peppers.

Bake in the preheated oven for about 25 to 35 minutes, or until the cheese is melted and bubbly.

Step 6: Serve

Once out of the oven, let the casserole stand for a few minutes before serving.

This allows it to set and makes it easier to slice.
