Ingredients

  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 1 chopped yellow onion
  • 4 minced garlic cloves
  • 3 chopped celery stalks
  • 3 chopped large carrots
  • 1/2 teaspoon garlic powder and onion powder each
  • 1/4 cup gluten-free all-purpose flour
  • 1 1/2 cups non-dairy milk (such as full-fat coconut milk)
  • 1.5 cups cooked basmati rice
  • 1 cup frozen peas
  • 1 pound cubed cooked chicken (rotisserie works well for this)
  • 3 cups chicken stock

Step 1: Preheat and Prepare the Casserole Dish

Preheat your oven to 375ºF.

While the oven is heating, spray a 9×13-inch casserole dish with non-stick cooking spray to ensure easy cleanup later.

Step 2: Cook the Vegetables

Heat a large Dutch oven over medium/high heat.
