Ingredients
- 2 tablespoons olive oil
- 8 ounces sliced mushrooms
- 1 chopped yellow onion
- 4 minced garlic cloves
- 3 chopped celery stalks
- 3 chopped large carrots
- 1/2 teaspoon garlic powder and onion powder each
- 1/4 cup gluten-free all-purpose flour
- 1 1/2 cups non-dairy milk (such as full-fat coconut milk)
- 1.5 cups cooked basmati rice
- 1 cup frozen peas
- 1 pound cubed cooked chicken (rotisserie works well for this)
- 3 cups chicken stock
Step 1: Preheat and Prepare the Casserole Dish
Preheat your oven to 375ºF.
While the oven is heating, spray a 9×13-inch casserole dish with non-stick cooking spray to ensure easy cleanup later.
Step 2: Cook the Vegetables
Heat a large Dutch oven over medium/high heat.
Add olive oil, followed by chopped onion, garlic, celery, carrots, mushrooms, garlic powder, and onion powder.
Cook these ingredients for about 5 minutes until the vegetables are tender and fragrant.
Step 3: Thicken the Vegetable Mixture
Sprinkle flour over the cooked vegetables.
Use a wooden spoon to mix the flour with the vegetables evenly.
The flour will absorb any excess liquid.

Remove the Dutch oven from heat once the milk has thickened.
