Ingredients
- 1 tablespoon coconut oil
- 1 whole onion
- 2 inches ginger
- 4 cloves garlic
- 2 carrots
- 1 teaspoon salt
- 1 can (796 ml or 28 ounces) tomatoes
- 1 teaspoon ground cumin
- Coconut milk (amount as desired)
Step 1: Sauté the Aromatics and Vegetables
Heat about 1 tablespoon of coconut oil in a Dutch oven or large pot over medium heat.
Add 1 whole chopped onion to the pot and sauté for a few minutes until the onion becomes translucent.
Peel a 2-inch piece of ginger using a spoon, roughly chop it, and add it to the pot.
Smash and roughly chop 4 cloves of garlic, then add them as well.
Peel and chop 1-2 carrots and add them to the mix.
Season the vegetables with 1 teaspoon of salt, cover the pot with a lid, and let the vegetables sweat for about 2-3 minutes.
Step 2: Add Tomatoes and Spices
Pour in 1 can (796 ml or 28 ounces) of diced tomatoes into the pot.
Stir in 1 teaspoon of ground cumin to incorporate the flavors throughout the vegetables.
This will create a robust base for your soup.
Step 3: Add Coconut Milk and Simmer
Pour in a can of coconut milk, but reserve a small amount for drizzling later.
Stir the mixture well and bring it to a simmer.
Cover the pot and let it cook for about 8 minutes, checking occasionally to see if you need to add any stock or water to maintain the desired consistency.
Step 4: Blend the Soup
After 8-10 minutes, check if the carrots are soft.
If they are, use a stick blender to blend the soup until smooth.
Be careful blending hot liquids; if using a countertop blender, allow the soup to cool slightly and blend in batches to avoid spills.
Step 5: Garnish and Serve
Drizzle the reserved coconut milk on top of the blended soup for a beautiful garnish.
Serve the soup as is, or add additional garnishes like fresh herbs or fried chickpeas to elevate the flavor and texture.
