Easy Egg Bake Casserole Recipe

Looking for a breakfast recipe that practically makes itself? This easy egg bake casserole is perfect for busy mornings when you need to feed a crowd or want to prep breakfast for the whole week ahead.

I started making this dish when my sister-in-law shared her version at a family brunch, and it’s been a regular in my kitchen ever since. Just mix everything up the night before, pop it in the fridge, and let your oven do all the work in the morning while you enjoy your coffee.

Ingredients

  • 6 oz diced bacon (approximately 5 slices)
  • 1 cup finely chopped onion
  • 1 teaspoon minced garlic
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 12 beaten eggs
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (about 4 oz)
 

Step 1: Preheat the Oven and Prepare the Baking Dish

Preheat your oven to 350 degrees Fahrenheit.

While the oven is heating, grease a 9×13” baking dish and set it aside for later use.

 

Step 2: Cook the Bacon and Veggies

In a large skillet over medium heat, cook diced bacon until it just starts to become soft.

Add minced garlic and onion, cooking until the bacon begins to brown.

Add red pepper and green pepper, cover the skillet, and cook for 5-10 minutes or until the veggies are soft and the bacon is browned, stirring occasionally.

Remove the skillet from heat and let the mixture cool.

 

Step 3: Prepare the Egg Mixture

In a medium bowl, whisk together the eggs.

Add sea salt and pepper to the eggs and whisk to combine well.

Once the bacon and veggie mixture has cooled, add it to the beaten eggs and stir to combine thoroughly.

 

Step 4: Add Cheese and Transfer to Baking Dish

Add cheese to the egg and bacon mixture, stirring to combine everything evenly.

Pour this mixture into the greased 9×13” baking dish, spreading it out evenly.

 

Step 5: Bake and Serve

Place the baking dish into the preheated oven and bake for 25-30 minutes or until the top is set and slightly browned.

Once done, remove the dish from the oven and let it cool for 5 minutes before serving warm.
