Ingredients
- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 cup diced onion
- 3 large garlic cloves, minced
- 1 14-ounce can crushed tomatoes (can use tomato sauce as an alternative)
- 1 14-ounce can fire-roasted diced tomatoes, drained
- 2 tablespoons heavy cream (or half and half)
- 2 teaspoons italian seasoning (or 1 teaspoon each of dried basil and oregano)
- Salt and pepper to taste
- 12 ounces cooked spaghetti or rice (follow package instructions)
Step 1: Prepare and Sear the Chicken
Heat a large skillet on medium-high heat.
While the skillet heats, rub chicken breasts with olive oil and sprinkle liberally with salt and pepper.
Once the skillet is hot, place the prepared chicken into the skillet and do not touch for 3-4 minutes, or until the chicken releases easily from the pan and forms a nice crust.
Flip and cook for another 3-4 minutes until brown.
Note that the chicken may not be fully cooked at this point but will continue to cook in the sauce.
Remove the seared chicken to a plate and set aside.
Step 2: Sauté the Onion and Garlic
Reduce the skillet’s heat to medium.
Add one tablespoon of olive oil.
Next, add the chopped onion and sauté until translucent, which should take about 3-4 minutes.
Then add the chopped garlic and cook for an additional minute, ensuring that the garlic becomes fragrant but does not burn.
Step 3: Prepare the Sauce
Add the crushed tomatoes, drained diced roasted tomatoes, heavy cream, and Italian seasoning to the pan.
Stir well to combine the ingredients and bring the mixture to a simmer.
The sauce should start to bubble gently around the edges.
Step 4: Cook the Chicken in Sauce
Add the seared chicken breasts back into the skillet, nestling them into the sauce.
Allow everything to simmer together for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked through.
Step 5: Serve
Once the chicken is fully cooked and the sauce has thickened, serve the chicken and sauce immediately.
This dish pairs wonderfully with rice or pasta if desired.
