Ingredients
- 3 cups heinen’s organic gluten free corn flakes
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 1 tsp. paprika
- 1/2 cup milk
- 2 large eggs
- 4 7-9 oz. boneless skinless chicken breasts
- Salt and pepper, to taste
- 3/4 cup mayonnaise
- 1/3 cup honey
- 1/4 cup yellow mustard
- 3 tbsp. whole grain mustard
- Salt and pepper, to taste
Step 1: Prepare the Cornflake Coating
Preheat your oven to 425°F (220°C).
In a food processor, combine 3 cups of Heinen’s Organic Gluten-Free Corn Flakes, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp paprika, and salt and pepper to taste.
Process on high speed until finely chopped.
If you don’t have a food processor, you can place the mixture in a bag and pound it with a mallet.
Once finely chopped, set the mixture aside on a plate.
Step 2: Prepare the Egg Wash
In a medium-sized bowl, whisk together ½ cup milk, 2 large eggs, and salt and pepper to taste.
Whisk until fully combined, then set the egg wash aside.
Step 3: Bread the Chicken
Take 4 boneless skinless chicken breasts.
One by one, dredge each chicken breast in the milk and egg wash, ensuring it’s well coated.
Then transfer each piece to the plate with the processed cornflakes and coat it thoroughly on both sides.
Place the coated chicken on a sheet tray lined with parchment paper.
Repeat the process for all chicken breasts.
Step 4: Bake the Chicken
Place the sheet tray with the breaded chicken into the preheated oven.
Bake at 425°F (220°C) for 25-30 minutes, or until the chicken is golden brown and cooked through.
Step 5: Make the Honey Mustard Sauce
While the chicken is baking, prepare the honey mustard sauce.
In a medium-sized bowl, combine ¾ cup mayonnaise, ⅓ cup honey, ¼ cup yellow mustard, 3 Tbsp whole grain mustard, and salt and pepper to taste.
Whisk everything together until fully combined and then set it aside.
Step 6: Serve and Enjoy
Once the chicken is done baking, remove it from the oven.
Serve the chicken on plates and garnish with chopped parsley if desired.
Serve each piece with a side of homemade honey mustard sauce.
