The holiday season is here, and you know what that means—it’s baking time!
I’m excited to share one of my favorite recipes: toffee pecan Christmas cookies.
These little bites of joy are sweet, crunchy, and just the right amount of festive.

Ingredients
For the cookie dough:
- 2 sticks unsalted butter (I like Kerrygold unsalted butter for this)
- 1/2 cup brown sugar (packed well)
- 1 tsp vanilla extract (pure vanilla for best flavor)
- 2 1/4 cups all-purpose flour
- 1 large egg (room temperature, about 70°F for better emulsification)
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup granulated sugar
For the add-ins:
- 1 cup toasted chopped pecans (toasting enhances their flavor)
- 1 cup toffee bits (Heath bits work great)
Step 1: Preheat Oven and Toast Pecans
Preheat your oven to 350°F (175°C).
Place 1 cup of pecans on a baking sheet and toast in the oven for 8-10 minutes until they achieve a dark mahogany color.
Allow the pecans to cool, then chop them into smaller pieces.
Step 2: Prepare the Wet Ingredients
In a mixing bowl, cream together 2 sticks of softened butter, 1/2 cup of packed brown sugar, and 1/2 cup of granulated sugar until the mixture is light and fluffy.
Add 1 large egg to the butter and sugar mixture and mix until well incorporated.
Stir in 1 teaspoon of vanilla extract.
Step 3: Combine Dry Ingredients with Add-Ins
In a separate bowl, combine 2 1/4 cups of all-purpose flour, 3/4 teaspoon of baking soda, and 1/2 teaspoon of salt.
Add 1 cup of toffee bits and the chopped pecans to the dry ingredients, mixing to coat them thoroughly in flour.
Step 4: Form the Cookie Dough
Gradually add the dry mixture to the wet mixture, stirring until just combined.
Use a 1.5 oz cookie scoop (about 3 tablespoons) to drop scoops of cookie dough onto parchment-lined baking sheets.
Flatten each scoop of cookie dough slightly with your fingers to prevent a hump in the baked cookies.
Step 5: Bake and Cool the Cookies
Bake the cookies in the preheated oven for 13-15 minutes until they are golden around the edges.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
