Today, I’m diving into a classic: mashed potatoes with cabbage.
It’s creamy, hearty, and packed with flavor. Plus, it’s a fantastic twist on regular mashed potatoes!

Ingredients
For the potatoes:
- 4 tbsp butter (like Land O’Lakes unsalted butter)
- 4 lb russet potatoes (peeled and cut into 1-inch chunks)
- 5 chopped green onions (green and white parts finely sliced)
- 1 tsp salt
- 1/4 tsp white pepper (freshly ground for better flavor profile)
- 1 cup milk (whole milk for best creaminess)
For the cabbage:
- 3 tbsp butter
- 1 cabbage (about 2 lb, cored and shredded thinly)
For serving:
- 4 tbsp butter (optional, for melting over individual servings)
Step 1: Boil the Potatoes
Begin by bringing 4 pounds of russet potatoes to a boil in a large pot filled with water.
Make sure the potatoes are fully submerged.
While the potatoes are cooking, you can start preparing the cabbage.
Step 2: Prepare the Cabbage
In a separate saucepan, add boiling water to the green outer leaves of one cabbage after removing the tough core.
Gently simmer the cabbage for 3 to 5 minutes until it starts to wilt, but still retains some bite.
Once done, thoroughly drain the cabbage and return it to the saucepan.
Add 3 tablespoons of butter to the cabbage and cover it.
There’s no need to heat it further at this point.
Step 3: Mash the Potatoes
Once the potatoes are soft, drain them and return them to the pot.
Keep the heat on for about 1 minute to evaporate any remaining liquid, then turn the heat off.
Add 1 cup of milk, 4 tablespoons of butter, and 5 chopped green onions to the pot.
Mash the potatoes three to four times around the pot to break them up, being careful not to over-mash and make them gummy.
Step 4: Combine Cabbage and Potatoes
Add the buttery cabbage you prepared earlier to the mashed potatoes.
Mix everything together so that the ingredients are well combined.
Season the mixture with salt and pepper to taste, approximately 1 teaspoon of salt and 1/4 teaspoon of white pepper.
Step 5: Final Touches and Serve
Just before serving, add 4 tablespoons of butter to the mixture, allowing it to melt slightly for a rich finish.
Serve the traditional Irish mashed potatoes with cabbage hot and enjoy!
