Today, I’m excited to share my recipe for pumpkin pie Rice Krispie treats.
They’re chewy, crunchy, and packed with that warm, cozy pumpkin spice flavor we all crave.

Ingredients
For the pumpkin treats:
- 4 tbsp butter
- 1 bag marshmallows (10 oz, mini or regular)
- 1/2 tsp vanilla essence (or extract for convenience)
- orange gel food coloring (a few drops for vibrant color)
- 1 tsp pumpkin pie spice (I use McCormick)
- 1/4 cup canned pumpkin (not pie filling)
- 6 cups rice krispies cereal
For the white chocolate drizzle:
- 1/2 cup white chocolate chips (Ghirardelli preferred for melting)
Step 1: Prepare the Pumpkin and Pan
Butter a 9×9 inch pan to prevent sticking.
Spread pumpkin on a stack of paper towels and let it sit for about 5-10 minutes to draw out excess moisture.
This step helps achieve the perfect consistency for your treats.
Step 2: Cook Pumpkin Mixture
In a large saucepan, melt butter over medium heat, stirring frequently to avoid burning.
Add the prepared pumpkin to the melted butter and continue heating, stirring until well mixed.
Next, add marshmallows and vanilla, and continue heating, stirring frequently until the marshmallows are fully melted.
Once melted, stir in pumpkin pie spice until distributed evenly.
If a deeper orange color is desired, add a few drops of orange food coloring at this point.
Step 3: Combine with Rice Krispies
Remove the saucepan from the heat.
Fold in rice krispies until thoroughly mixed.
To make this process easier and less sticky, you can transfer the mixture to a large bowl and spray your hands with non-stick spray.
Evenly press the mixture into the prepared buttered pan.
Allow it to cool completely before adding the drizzle.
Step 4: Prepare White Chocolate Drizzle
While the Rice Krispies mixture is cooling, melt white chocolate chips using a double boiler or a heat-safe bowl placed over a small pot of water.
Heat over medium/high heat, stirring frequently until the chocolate is melted and smooth.
Pour the melted chocolate into a piping bag for easy drizzling.
Step 5: Decorate and Serve
Gently drizzle the melted white chocolate across the cooled Rice Krispies treats.
Allow the chocolate to cool and harden.
Cut the treats into 9 squares.
