Ingredients
For the pie_filling:
- 1/2 tsp salt
- 2 large eggs (room temperature for better emulsification)
- 1 tbsp pumpkin spice
- 1 cup heavy cream (for a rich, creamy filling)
- 1 cup packed brown sugar
- 1 cup pumpkin puree (I use Libby’s pumpkin puree)
For the pie crust:
- 1 pie crust (store-bought or homemade, 9-inch deep dish)
For the topping:
- 2 tbsp brown sugar
- 1/2 cup chopped walnuts (for a nice crunch)
- 1/2 tsp cinnamon
Step 1: Prepare the Filling
In a mixing bowl, beat together the pumpkin, cream, brown sugar, eggs, pumpkin pie spice, and salt until the mixture is smooth and creamy.
This forms the delicious filling for your pumpkin pie.
Step 2: Prepare the Pie Crust and Bake
Arrange the pie crust in a 9-inch pie plate and crimp the edges.
Pour the prepared filling carefully into the pie crust.
Bake in a preheated oven at 350°F (175°C) for 30–45 minutes, or until the filling is nearly set.
If the crust starts to brown too quickly, tent it with foil to prevent burning.
Step 3: Prepare the Topping
While the pie is baking, place all topping ingredients in a blender and pulse until finely chopped.
This will create a flavorful topping to add a nice texture to your pie.
Step 4: Add Topping and Continue Baking
Once the initial baking is done, remove the pie from the oven and sprinkle the finely chopped topping evenly over the pie.
Reduce the oven temperature to 325°F (160°C) and return the pie to the oven.
Bake for an additional 15 minutes, or until the filling is completely set.
Step 5: Cool and Serve
Once fully baked, remove the pie from the oven and allow it to cool completely before serving.
This will help the filling set properly and make slicing easier.
Enjoy your creamy, spiced pumpkin pie with a delightful topping!
