Ingredients
- 2 tsp vanilla essence (use pure vanilla extract for best flavor)
- 1 can evaporated milk
- 1/2 cup Bisquick mix
- 2 tbsp soft unsalted butter (I like Kerrygold for this recipe)
- 2 large eggs
- 1 can pumpkin puree (I use Libby’s pumpkin puree)
- 3/4 cup sugar
- 2 1/2 tsp pumpkin pie spice
- whipped cream for garnish
Step 1: Prepare the Oven and Pie Plate
Preheat your oven to 350°F (175°C).
While the oven is preheating, spray a deep 8-inch pie plate with cooking spray to prevent sticking.
Step 2: Combine Ingredients
In a large mixing bowl, combine the following ingredients: sugar, Bisquick, melted butter, evaporated milk, eggs, pumpkin puree, pumpkin spice, and vanilla extract.
These should blend well together to create a smooth mixture.
Step 3: Mix the Batter
Using a hand mixer, blend the ingredients at medium speed until the mixture is well blended and smooth.
This should take about 2 minutes.
Make sure there are no lumps and that everything is fully incorporated.
