Ready to dive in? Let’s get cooking!

| Preparation Time | 10-15 minutes |
| Cooking Time | 30-40 minutes |
| Total Time | 40-55 minutes |
| Level of Difficulty | Easy |
Ingredients
- 2 tbsp soy sauce (I use Kikkoman low-sodium)
- 8 chicken pieces (thighs or drumsticks work well)
- 1 tbsp corn flour
- pinch mixed spice
- 1 tbsp sweet chili sauce
- 3 tbsp apricot jam (smooth, not chunky)
Step 1: Preheat the Oven
Start by preheating your oven to 180°C (350°F).
This ensures that your oven reaches the correct temperature by the time your preparation is complete.
Step 2: Prepare the Chicken
Place 8 chicken pieces in a single layer in a baking dish.
Ensure the pieces are evenly spaced for uniform cooking.
Step 3: Make the Sauce
In a bowl, mix together 3 tablespoons of apricot jam, 2 tablespoons of soy sauce, 1 tablespoon of sweet chili sauce, a pinch of mixed spice, and 1 tablespoon of corn flour.
Stir until the mixture is well combined and smooth.
Step 4: Combine Chicken and Sauce
Pour the prepared mixture over the chicken pieces in the baking dish.
Use a spoon or spatula to ensure all the chicken pieces are coated evenly with the sauce.
Step 5: Bake the Chicken
Place the baking dish in the preheated oven and bake for 30 to 40 minutes, or until the juices run clear.
Check the chicken periodically to ensure it is cooking evenly and not drying out.
Step 6: Serve and Enjoy
Once the chicken is done, remove it from the oven.
Serve the baked chicken with a side of rice or mashed potatoes and green vegetables.
Enjoy your delicious meal!
