Ingredient Substitutions

Self-raising flour can be replaced with a mixture of all-purpose flour and baking powder for those who don’t have self-raising flour on hand.

Use 1 cup of all-purpose flour mixed with 1.5 teaspoons of baking powder and a pinch of salt. This substitution maintains the leavening properties necessary for the bread to rise properly.

For a gluten-free option, use a 1:1 gluten-free flour blend designed for baking.

Plain Greek yogurt can be substituted with regular plain yogurt, but strain it through a cheesecloth for about an hour to remove excess liquid and achieve a thicker consistency similar to Greek yogurt.

For a dairy-free alternative, use unsweetened coconut yogurt or soy yogurt, which will provide a similar tangy flavor and creamy texture.

Keep in mind that plant-based yogurts may alter the taste slightly and might require a small adjustment in flour quantity to achieve the right dough consistency.

  • 1 cup self-raising flour
  • 1 cup plain greek yogurt
 

Step 1: Combine Ingredients for Dough

Begin by adding the required amount of flour and yogurt to the bowl of your stand mixer.

If you have a mixer, use the dough hook attachment and mix on medium speed until the dough comes together, forming a clean ball that pulls away from the sides of the bowl.

 

Step 2: Mix and Knead by Hand (If Necessary)

If you don’t have a mixer, combine the flour and yogurt in a large bowl.

Use a wooden spoon or spatula to mix the ingredients until they are just combined.

Once mixed, use your hands to knead the dough in the bowl a few times until it becomes smooth and cohesive.

Ensure the dough is well-blended and has a uniform texture.

 

Step 3: Create Roll Shapes

Generously dust your workspace with flour. Transfer the dough onto this floured surface.

Using a dough cutter or sharp knife, divide the dough into 8 equal sections. Shape each section into a round roll.

For added visual appeal, use a sharp knife to create two shallow slits, about 1/4 inch deep, on the top of each roll.

 

Step 4: Prepare and Bake

Grease an oven-safe or cast iron skillet with butter. Arrange the shaped rolls in the greased skillet.

Place the skillet in a preheated 350°F (175°C) oven. Bake for approximately 25 minutes, or until the rolls develop a golden-brown crust.
