Ingredients
- 500 grams mixed frozen fruit
- 500 grams granulated sugar
- 150 ml spiced wine
- 1 lemon
- 1/3 teaspoon cinnamon powder
Step 1: Prepare Equipment and Ingredients
Begin by placing a plate in the fridge to chill.
This will be used to test the set of the jam later.
Next, set a saucepan or jam pan on low heat and add the frozen fruit to it.
Pour the mulled wine over the fruit, allowing them to begin softening.
While waiting, weigh out the sugar that you’ll be using and set it aside for easy access during cooking.
Step 2: Combine Ingredients and Cook the Jam
Once your fruit has started to soften, add in the pre-measured sugar, stirring it into the fruit and wine mixture.
Squeeze the juice of a lemon directly into the pan and add the rind as well, as it will contribute to flavor and help with setting.
Allow the sugar to dissolve completely over continued low heat.
Step 3: Bring to a Boil and Test the Set
Once the sugar is dissolved, increase the heat to achieve a gentle, rolling boil.
Maintain this boil for about 5 minutes, stirring frequently to prevent burning and to help the jam thicken.
During the boiling process, periodically skim off any scum that forms on top of the jam.
Step 4: Test Jam Consistency
To check for doneness, remove the pan from heat and drop a few drops of the jam onto the chilled plate from the fridge.
After a minute, gently push the edge of the jam with your finger.
If it starts to wrinkle and holds that wrinkle, the jam is set.
For a thicker set, look for a strong wrinkle.
If there’s no wrinkle, return the jam to heat for an additional 2 minutes and retest.
Step 5: Jar the Jam
Once the desired set is achieved, remove the lemon rinds from the jam.
Carefully spoon the hot jam into warm, sterilized jars.
Seal the jars by screwing on the lids tightly while the jam is still hot, then leave them to cool completely.
