Ingredient Substitutions
Ground turkey can be replaced with ground chicken, lean ground beef, or crumbled firm tofu for vegetarian options. These alternatives offer similar textures and can absorb the dish’s flavors well. Adjust cooking times slightly for beef or tofu. Sesame oil, which provides a distinct flavor, can be substituted with walnut oil or a neutral oil like canola mixed with a few drops of toasted sesame seeds. This maintains the nutty essence while accommodating those with sesame allergies. For a lower-carb version, replace brown sugar with a natural sweetener like stevia or monk fruit extract. Use about 1/3 to 1/2 the amount, as these alternatives are often sweeter than sugar. Taste and adjust as needed to achieve the desired level of sweetness.

Ingredients
- 2 teaspoons extra-virgin olive oil
- 1 large onion, chopped finely
- 3 garlic cloves, minced
- 1 pound lean ground turkey
- 1 1/2 tablespoons sesame oil
- 1 1/2 teaspoons ground ginger
- 1 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon brown sugar
- 1/2 cup unsalted chicken stock
- 8 cups cabbage, shredded
- 1 1/2 cups carrots, shredded
- 2 tablespoons reduced-sodium soy sauce
Step 1: Sauté the Onion and Garlic
Heat oil in a large, deep skillet over medium heat.
Once the oil is hot, add the chopped onion and cook until it is softened, about 5 minutes.
Add minced garlic and cook for another 30 seconds, until it becomes fragrant but not burnt.
Step 2: Cook the Ground Turkey
Add the ground turkey to the skillet with the onions and garlic.
Cook it thoroughly, breaking it up with a spoon as it browns, for about 7-8 minutes.
Ensure the turkey is cooked through and no longer pink.
Step 3: Season the Mixture
Pour in the sesame oil and sprinkle ground ginger, red pepper flakes, salt, pepper, and brown sugar over the turkey mixture.
Stir well to combine all the flavors evenly throughout the meat.
Step 4: Add Cabbage and Simmer
Add the chicken broth to the skillet along with the cabbage.
Stir everything thoroughly, making sure the cabbage is mixed well with the turkey and broth.
Bring the mixture to a gentle simmer and allow it to cook until the cabbage is slightly wilted.
Step 5: Cook the Carrots
Add the carrots to the skillet and continue cooking for another 2-3 minutes, until the carrots are softened but still have a slight crunch.
Step 6: Final Seasoning and Serve
Stir in the soy sauce and taste the dish to adjust seasonings as needed.
Once you are satisfied with the taste, serve the dish immediately while hot.
Enjoy your delicious, savory meal!
