Ingredients
- 1/2 tsp pepper
- 1 cup chicken stock (low sodium is a good choice)
- 2 tbsp taco seasoning (homemade or your favorite brand)
- 3 boneless chicken breasts (about 1.5 lbs, cut into 1-inch pieces)
- 1/2 chopped onion (yellow or white, finely diced)
- 2 cans great northern beans (drained and rinsed well)
- 1/2 tsp garlic salt
- 1 can diced tomatoes with green chilis (I prefer Rotel for this)
- 1/2 tsp salt
Step 1: Assemble the Ingredients in the Crock Pot
Begin by placing your chicken in the crock pot.
After the chicken is settled, pour all additional ingredients over the top.
This can include any combination of your desired seasonings, broth, vegetables, or sauces.
Make sure everything is adequately distributed around and on top of the chicken.
Step 2: Slow Cook the Chicken
Cover the crock pot with its lid and set it to cook on low for 6 to 8 hours, or if you’re short on time, on high for 3-4 hours.
During this process, the flavors will meld together and the chicken will become tender and juicy.
Step 3: Shred the Chicken
Once the cooking time has elapsed, carefully remove the chicken from the crock pot.
Use two forks to shred the chicken into bite-sized pieces.
This should be very easy if the chicken is thoroughly cooked and tender.
Step 4: Combine and Stir
Return the shredded chicken to the crock pot.
Stir everything together to mix the chicken thoroughly with the sauce and other ingredients left in the pot.
This will help the chicken absorb more flavor.
Step 5: Serve and Enjoy
Once everything is stirred and heated through, it’s time to serve.
