Ingredients
- 6 cups potatoes, sliced thinly (around 4 pounds)
- 3 tablespoons butter (extra for topping if preferred)
- 3 tablespoons all-purpose flour
- 1 teaspoon onion powder
- Salt and pepper (to taste)
- 1 3/4 cups chicken stock
- 2 tablespoons olive oil
- 6 to 8 pork loin chops, boneless

Step 1: Prepare the Oven and Baking Dish
Start by preheating your oven to 350 degrees Fahrenheit.
While the oven is heating, prepare a 9×13 baking dish by coating it with nonstick cooking spray.
Evenly place the potatoes into the prepared baking dish, setting it aside for later.
Step 2: Create the Sauce
In a medium stockpot, melt the butter over medium heat.
Once the butter is melted, add the flour and desired seasonings, and whisk until the mixture becomes bubbly.
Gradually add the chicken broth, continuing to whisk until the mixture is smooth and well combined.
Bring the sauce to a boil while stirring often.
Once boiling, reduce the heat and allow the sauce to cook for an additional 1 to 2 minutes until it thickens.
Step 3: Assemble the Casserole
Pour the thickened sauce over the potatoes in the baking dish, ensuring that the potatoes are well-coated.
Meanwhile, move on to the preparation of the pork chops.
Step 4: Sear the Pork Chops
