Possible Ingredient Alternatives
Boneless pork chops can be replaced with chicken breasts or firm tofu for different protein options. Adjust cooking times accordingly, as chicken may require longer cooking and tofu less time than pork. For a vegetarian version, use thick slices of portobello mushrooms, which offer a meaty texture and umami flavor. Butter can be substituted with olive oil or coconut oil for dairy-free alternatives. These oils provide similar cooking functions and add their own unique flavors to the dish. Zucchini can be swapped with yellow squash, eggplant, or bell peppers for variety. These vegetables have similar cooking times and textures, maintaining the overall structure of the dish while offering different nutritional profiles and flavors.

Estimated Nutrition
Estimated nutrition for the whole recipe (without optional ingredients):
- Calories: 600-700
- Protein: 50-55 g
- Fat: 45-50 g
- Carbohydrates: 10-15 g
Ingredients
- 5 minced garlic cloves (freshly minced for best flavor)
- 1 tsp fresh minced thyme
- 2 to 3 medium zucchini, diced (about 1/2-inch pieces)
- ground black pepper to taste (freshly ground preferred)
- 1/4 cup fresh minced oregano
- salt to taste
- chopped fresh parsley, for garnish
- lemon slices, for garnish
- 3 boneless pork chops (about 1-inch thick for even cooking)
- 3 tbsp butter (I like Kerrygold unsalted butter)
Step 1: Season the Pork Chops
Begin by seasoning the pork chops with salt and pepper on both sides.
This will enhance the flavor of the meat during cooking.
Step 2: Prepare the Garlic Butter
Melt butter in a medium-sized skillet over medium heat.
Add minced garlic, chopped oregano, and thyme to the melted butter, stirring occasionally to infuse the butter with the herbs and garlic aroma, being careful not to burn it.
Step 3: Cook the Pork Chops
Place the seasoned pork chops into the skillet.
Cook them for 4-5 minutes on each side, ensuring that they are fully cooked through to a safe internal temperature.
Once cooked, remove the pork chops from the skillet and set them aside on a plate to rest.
Step 4: Sauté the Zucchini
In the same pan with the flavorful garlic butter, add the diced zucchini.
Season it with salt and pepper to taste.
Sauté the zucchini for 2-3 minutes, stirring occasionally until it is tender but still slightly firm.
Step 5: Reheat the Pork Chops
Return the cooked pork chops to the skillet with the sautéed zucchini.
Allow them to reheat for about a minute so they absorb some of the dish’s flavors and warm through.
Step 6: Serve and Garnish
Serve the garlic butter pork chops immediately alongside the zucchini.
For added flavor, garnish with lemon slices, a shaving of butter, a drizzle of freshly squeezed lemon juice, and additional parsley or oregano if desired.
Enjoy your meal!
