Quick Ricotta Egg Bites

If you ask me, ricotta egg bites are a breakfast game-changer.

These protein-packed little bites make mornings so much easier, combining fluffy eggs with creamy ricotta cheese in a perfectly portioned package. They’re like mini frittatas that you can grab and go.

I love making a big batch on Sunday and having them ready in the fridge all week long. A sprinkle of herbs and a touch of seasonings give them just the right flavor without any fuss.

They’re the kind of no-stress breakfast that works for busy weekdays but still feels special enough for a weekend brunch spread.

Why You’ll Love These Ricotta Egg Bites

  • Three-ingredient simplicity – With just eggs, ricotta, and seasonings, you can whip these up even when your pantry is nearly empty.
  • High protein breakfast – These egg bites are packed with protein from both eggs and ricotta, making them perfect for a filling breakfast or post-workout snack.
  • Meal prep friendly – Make a batch on Sunday and enjoy them throughout the week – they reheat beautifully for quick, grab-and-go breakfasts.
  • Low carb and keto-friendly – With no added carbs, these egg bites fit perfectly into low-carb and keto eating plans while still being creamy and satisfying.

What Kind of Ricotta Should I Use?

For egg bites, both whole milk and part-skim ricotta will work well, though part-skim tends to give a slightly lighter result. You’ll find ricotta in the dairy section of your grocery store, usually packaged in plastic tubs. Fresh ricotta from specialty stores or Italian markets can add an extra special touch, but the standard supermarket variety works perfectly fine for this recipe. If your ricotta seems particularly watery, you can strain it in a fine-mesh sieve or cheesecloth for about 30 minutes before using – this will help prevent your egg bites from becoming too wet.

Options for Substitutions

This simple egg bite recipe can be adapted with a few smart swaps if needed:

  • Eggs: Eggs are the main ingredient here and can’t be substituted – they’re essential for this recipe to work!
  • Ricotta cheese: If you’re out of ricotta, you’ve got options! Cottage cheese works great (just blend it smooth first), or try cream cheese (softened) for a different taste. Greek yogurt can also work, but use a bit less since it’s more liquid-y than ricotta.
  • Salt and pepper: While basic salt and pepper are classic, you can experiment with other seasonings like garlic powder, dried herbs, or even a pinch of cayenne for some heat. Just remember that eggs need some salt to taste their best!

Watch Out for These Mistakes While Cooking

The biggest challenge when making egg bites is preventing them from becoming rubbery and tough – the secret lies in not overcooking them and keeping a close eye on the temperature. A common mistake is filling the molds too full, which can lead to overflow and uneven cooking, so aim to fill each cavity only about 3/4 of the way. For the smoothest texture, blend your eggs and ricotta thoroughly until completely smooth, as any lumps of ricotta will create inconsistent spots in your finished bites. The final temperature should reach 165°F, but remove them from the heat at 160°F since they’ll continue cooking for a few minutes after – this prevents the dreaded rubbery texture that comes from overcooking eggs.

What to Serve With Egg Bites?

These protein-packed egg bites make a perfect breakfast or brunch, and they pair really well with so many morning favorites! A side of crispy hash browns or roasted breakfast potatoes adds a nice contrast to the soft, fluffy texture of the egg bites. For a lighter option, try serving them with fresh fruit like berries or melon, or add some sliced avocado for healthy fats. If you’re meal prepping for the week, these egg bites also taste great alongside some sautéed spinach or a slice of whole grain toast with butter.

Storage Instructions

Keep Fresh: These egg bites are perfect for meal prep! Place them in an airtight container and keep them in the fridge for up to 4 days. They make such an easy grab-and-go breakfast option for busy mornings.

Freeze: Want to make a bigger batch? These little guys freeze really well. Just pop them in a freezer-safe container or zip-top bag and they’ll stay good for up to 2 months. I like to separate layers with parchment paper to prevent sticking.

Warm Up: When you’re ready to eat, microwave refrigerated egg bites for about 30 seconds, or frozen ones for about 1-2 minutes. You can also wrap them in foil and warm them in the oven at 350°F for about 5-7 minutes. Just be careful not to overheat, as they can get a bit rubbery.

Estimated Nutrition

Estimated nutrition for the whole recipe (without optional ingredients):

  • Calories: 800-900
  • Protein: 70-80 g
  • Fat: 50-60 g
  • Carbohydrates: 15-20 g

Ingredients

  • 1 cup part-skim ricotta cheese (I like Calabro for this)
  • 1 dash black pepper (freshly ground for best flavor)
  • 1 dash salt
  • 9 large eggs

Step 1: Preheat Oven and Prepare Egg Mixture

Start by preheating your oven to 325°F.

While the oven is warming up, use a blender or a bowl with an immersion blender to blend together your eggs, ricotta cheese, salt, and pepper.

Blend until the mixture is smooth and well combined.

Step 2: Set Up Silicone Molds

Place silicone molds inside a baking pan or on a sheet pan to prepare them for filling.

Carefully fill each mold with the egg mixture, making sure to leave a small gap at the top to allow for any expansion during cooking.

Step 3: Create a Hot Water Bath

To ensure your egg bites cook evenly, you’ll need to create a hot water bath.

Pour hot water into the baking pan or sheet pan the silicone molds are sitting in.

Fill with water until it reaches about halfway up the sides of the silicone molds.

The water doesn’t need to be boiling; the hottest water from your tap will suffice.

Step 4: Bake the Egg Bites

Carefully place the baking pan or sheet pan containing the molds on the bottom rack of your preheated oven.

Bake for 25-35 minutes.

The egg bites are done when they are fully set and do not jiggle when gently shaken.

Step 5: Cool and Store

After baking, allow the egg bites to cool in the pan.

Once cooled, remove them from the silicone molds and transfer them to an airtight container.

Store them in the fridge and enjoy them anytime you’re ready!

    • Hello Kimberli,
I just scrolled, for what felt like a half hour, to see if anyone addressed these same questions. I just made these, and this is my result. I used silicone cupcake liners, and got 15 egg bites (filled 3/4 way up). I baked them at 325 in a water bath for 35 mins. They are still cooling but I tried one straight out of the oven, and they tasted “ok” (I’d add more seasoning next time). The texture is creamy, and custard like. I’d make them again and play with seasoning, possibly adding crispy bacon bits to the batter before baking.
