Ingredients
- 3 mushrooms, chopped
- 1 cup baby spinach
- 1 teaspoon light olive oil
- 1/2 cup cottage cheese
- 1/4 cup marinara sauce
- 1/4 teaspoon italian seasoning
- 1/4 cup mozzarella cheese
- 8 slices turkey pepperoni
- Basil leaves (for garnish)
- Dash of garlic powder
- Pinches of salt
Step 1: Prepare the Vegetables
Start by dicing three mushrooms into small pieces.
Heat a small frying pan over medium heat and add about 1 teaspoon of light olive oil.
Once the oil is hot, add the diced mushrooms and 1 cup of baby spinach to the pan.
Sprinkle in a dash of garlic powder and a couple of pinches of salt.
Step 2: Sauté the Mixture
Gently stir the mixture and cook for about 2 to 3 minutes, or until the spinach wilts and the mushrooms are browned.
Once cooked, remove the mushrooms and spinach from the pan and place them on two pieces of paper towel to absorb any excess moisture.
Press down gently to remove the moisture.
Step 3: Chop and Combine Ingredients
Roughly chop the spinach to avoid long stems or pieces.
In a bowl, combine ½ cup of cottage cheese, ¼ cup of marinara sauce, and ¼ teaspoon of Italian seasoning.
Mix well until all ingredients are combined.
Then, add the sautéed mushrooms and spinach to the cottage cheese mixture.
Step 4: Add Cheese and Meat
Layer in ¼ cup of mozzarella cheese and your choice of cooked meat, such as 8 slices of turkey pepperoni.
Mix gently to combine all the ingredients evenly.
Step 5: Cook the Cottage Cheese Pizza Bowl
Choose your cooking method: microwave, oven, or air fryer.
If using the microwave, cover the bowl with a paper towel or microwave cover and heat for 1 minute, or until the cheese is bubbly and melted.
If desired, pour off any excess liquid from the marinara sauce after cooking.
Step 6: Garnish and Serve
Optionally, garnish your Cottage Cheese Pizza Bowl with finely diced basil leaves for added flavor and color.
