Ingredients
- 2 ripe bananas
- 1/2 cup cottage cheese
- 1/2 cup maple syrup
- 1/3 cup unsweetened applesauce
- 2 tablespoons light olive oil
- 2 teaspoons apple cider vinegar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 egg white
- 2 cups oat flour
- 1/2 cup almond flour
- 1/3 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
Step 1: Preheat and Prepare
Preheat your oven to 425°F (220°C).
While the oven is heating up, take 2 ripe bananas and mash them in a bowl until smooth using a fork or an immersion blender.
This will be the base for your muffin mix.
Step 2: Blend Wet Ingredients
Add the following wet ingredients to the mashed bananas: ½ cup cottage cheese, ½ cup maple syrup, ⅓ cup unsweetened applesauce, 2 tablespoons light olive oil, 2 teaspoons apple cider vinegar, and 1 teaspoon vanilla extract.
Blend these ingredients together until smooth.
Step 3: Combine Eggs and Dry Ingredients
Incorporate 2 eggs and 1 egg white into the banana mixture, whisking until well combined.
In a separate bowl, combine the dry ingredients: 2 cups oat flour, ½ cup almond flour, ⅓ cup cocoa powder, 1½ teaspoons baking powder, ½ teaspoon baking soda, 1 teaspoon cinnamon, and ½ teaspoon salt.
Mix the dry ingredients together until they are well blended.
Step 4: Mix and Fold
Gradually add the dry mixture to the wet mixture, stirring until just combined.
Be careful not to overmix.
Once combined, fold in ½ cup chocolate chips using a spatula for an extra chocolatey treat.
Step 5: Prepare Muffin Tray and Bake
Line a muffin tray with paper liners and spray with non-stick spray to prevent sticking.
Using a ⅓ cup batter scoop, fill each muffin cup while allowing the batter to mound in the center for a high dome.
If you have extra batter, pour it into a mini loaf pan.
Top each muffin with a few extra chocolate chips for added flavor and presentation.
Step 6: Bake and Serve
Bake the muffins in the preheated oven at 425°F for 5 minutes.
After 5 minutes, reduce the oven temperature to 350°F (175°C) and bake for an additional 20 minutes, or until a toothpick inserted comes out clean.
Once baked, allow the muffins to cool in the tray before serving.
